Another week has gone by and I am seriously beginning to think that I am never going to find, what is turning out to be, the very elusive additional six hours in my day. But I am not a quitter and I will continue to search high and low until I find these hours gosh darnit! Until then however, I continue to make the most of my time whenever I can and see how I can save as much time as possible by making changes and adjustments to my routine. One of these adjustments is to make my own lunch for work and take it with me everyday.
This is actually a two-fold savings. It saves both time and money because lets face it, buying lunch everyday adds up really quickly. Another very important added benefit to taking your own lunch to work everyday is that you are better able to control what you eat and better able to maintain your healthy lifestyle. As much as you may have good intentions to buy a healthy lunch, it doesn’t always work out when you barely have an hour to grab something quickly or you get dragged into yet another birthday lunch for your co-workers.
In my previous post “Save Time- Meal Prep” I talked about my process for prepping my meals for the week. Included in the meal prep is my lunch for the week. About a year ago, I decided that I was spending way too much money at Panera Bread buying their salads everyday. Their salads are delicious don’t get me wrong and once in a while I still head over there and pick up a “Modern Greek Salad with Quinoa” salad, without the olives of course (yuck) but if you want complete control of what goes into the food you eat, the best thing you can do is make everything yourself. So, this is exactly what I did. I started off by going onto my favorite website (after www.fitinstilettos.com of course 🙂 ) Pinterest and searched for salad recipes and also salad dressings. I bought a box of one hundred salad bowls from Amazon and started making my own salads for work. It is really fun to do as you can play around with the ingredients, try different things and experiment with different salad dressings. Now, I make my salads and dressings with no help from Pinterest and enjoy every minute of creating my salad masterpieces.

I also cook different soups for lunch as well. I look up recipes on Pinterest and cook a big batch on Friday or Sunday, my prep days, and take a bowl to work for lunch. I also do sandwiches using Whole Wheat bread or Ezekiel English Muffins, avocado and Chavrie Goat Cheese. The sandwiches of course can’t be prepped days ahead of time so I keep them simple and slap them together in the morning before work. It’s up to you what you want to take to work for lunch, just try to keep it simple if it cannot be made too far in advance so you don’t spend too much time cooking your lunch in the morning, remember the goal is to save time.
Snacks are also a good thing to bring from home to prevent the three o’clock vending machine raid. I get Ziploc Snack Bags and fill them with Raw Almonds, Red Pepper Slices, Grapes etc. I assemble the bags on my prep days so all I have to do is grab a bag from the fridge or pantry before I leave for work.

You can save so much time and not to mention money by prepping your lunch and snacks at home and as I mentioned before it is much easier to maintain a healthy lifestyle if you know exactly what you are putting in your body. Give it a try and let me know how it goes 🙂
